Bountiful Baskets

Since we moved from the Memphis area to Texas I've discovered a veggie paradise... vegan friendly food trucks, vegan restaurants and cheap produce galore! We haven't been to the food trucks or restaurants but every week I'm getting my Bountiful Basket. For $15 you can get a basket of fruits and veggies (its random so its always a surprise what you'll get), plus any add ons (breads, canning veggies, cookies). It's so nice to just go to the pickup site on saturday and get all my produce and then plan the weeks meals around that.

This was this weeks haul, no add ons:

My phone couldn't get all of it in the pic but theres apples, onions, squash, tomatoes, celery, lettuce, spinach, kiwis (giving to a friend), strawberries, lemons, bananas, and corn. Yum - minus the kiwis.

We're definitely eating better now thanks to BB and the recipes on Pinterest haha. KP loves going through the box and helping me prep the food for the week, but for her that usually means sneaking some fruit.

This weeks menu:
Taco salad with tvp
Spinach Cakes with mashed potatoes and veg burgers
Cheesy Quinoa with side salad
Refried beans (crockpot w/no fat!) and onion tanglers... see I made up for the beans not having fat.
Quinoa with rotel and mushroom soup all mixed together.
Black bean burgers, grilled corn and maybe some fries

Breakfast is usually whatever I can muster to fix with KP screaming "EAAAT EAT" until I'm able to sit her at the table.

Peanut butter and celery
Smoothie packs which are already in the freezer waiting to be used

Not bad, right?
