Menu 7/29

So, I've been slacking on posting menus. Oh well, I suppose. I'm still going through the vegan cookbooks and we're also going through a "I want this before we go vegan" deal.

Breakfast:

Steel cut oats
Grits
Eggs
Fruit/Smoothies

Snacks:
Fruit
Veggies
Tortilla chips
Smoothies
Cat Cookies (for people) Yay, Trader Joes!


Lunch:
Leftovers

Dinner:
Stir fry with rice
fried rice with tofu
bok choy with rice
cheese wontons and stir fried napa cabbage
mashed potatoes with spinach served with roasted mushrooms
Pizza with white sauce, carrots and broccoli
Pasta with pesto

Backup meals:
Refried beans
Alfredo
Miso Soup
Black beans n rice


This week for Bountiful Baskets we got the Asian food add-on pack. I'm a bad person and had to google what was what but it made meal planning super simple. B commented that it didn't look like much for the price but it actually worked out perfectly. After going over the shopping list, I only have maybe, 13 items to get and thats including stocking up on art supplies for KP. Huzzah!

Book worm

Honestly, this week has been what I'm sure some would call dull - housework, sleep, grocery shopping. I've been trying to get our vegan "rules" together but I've been distracted by books.

Since KP and I signed up for the summer reading program, I've become addicted to reading The Hunger Games series. During her naps and after shes down for the night, I'm up for hours reading. I haven't really read for pleasure since... before she was born. It's awful, I know. I've always loved reading but college and then work interfered with that. I could barely stay awake to eat dinner, no less read.

 I 'm so captivated by these books, I'm not going to know what to do when I finish Mockingjay. I need to admit, I know how it ends already thanks to my impatience and google. Knowing how it ends is making me want to read more - are they happy? What about the other main character? How did they decide who to choose? Ahhhh. And I can.not.wait. for the movies. Hunger games DVD in 3 weeks. Catching fire release date? November 2013. What the eff, y'all? What the eff. Sigh...

By the time I had turned in our one week reading logs I had read to KP for 310 minutes and I had read a total of 790 minutes. Among the prizes she got a bendable cow and giraffe, a free cookie and entry into a prize pack. I got a pen, some flashcards for KP and some crafting stuff and a free taco from a local chain. They also had tape in the prize drawer. At first I thought "thats a prize?" Now, I realize I actually need tape like that. The joys of adulthood, I suppose. If only I could take a bouncy ball from the kid prizes.

Vegan stuffs

Ah poor neglected blog, im sorry. I started this post in July! Ugh.

Well, we're still vegetarian. Ive found reasonable sources for everything we need except plant milks.
The only plant milks I can find have an unnecessary additive that im not okay with.

So now im wondering if my google-fu is failing me on finding additive free, reasonably priced milk OR im going to need to learn how to make it myself.

I have no problem with taking the time to do it, its just that our kitchen is so tiny. Like cant fit two people comfortably tiny.

It feels like forever since i blogged so i cant remember if i mentioned that i found overstock daiya and gardein products for cheaaaaap! The gardein was gone in days thanks to the ravenous toddler.

Daiya on the other hand im hoarding in the freezer. I made grilled cheese with a bit and i cant believe how gooey it is! Kp scraped it off the bread and just ate thr cheese. B had the spicy havarti and really enjoyed it, too.

We also got our first vegan cookbook, Vegan Crunk. Ive read Bianca for years, and she was super nice about answering vegan questions for me via email. I seriously want to make everything in her book. Memories of my toddler years came flooding back when i saw her white trash pineapple salad.  Im going to be sitting down and going over the book thoroughly to see whats going on the menu this week.

Changes

I haven't really updated in a while thanks to being busy and by busy, I mean exhausted.

Our third visit happened and it was so much fun hanging out with her. KP freaked out at first but fell right back into the swing of things when my friend let her wear her shoes and fedora. The main thing she wanted to do was see fireworks at the lake so we did that, while KP ran around saying "All done!" Other than that, it was a pretty laid back weekend. B talked to her about colleges here (since she works in admin) and helped him get some ducks in a row. Since B had the week off for vacation he registered for classes. I'm really excited for him to be back in school!

 He also got a Texas license which meant we could finally get library cards (and not pay the fee for being out-of-towners). All three of us are now signed up for the summer reading program. They have NO book limit. Back home? 12. It drove me nuts and I HATED having to narrow down what I wanted. I'm so giddy over this. I'm a nerd and I love it.
KP, who while grocery shopping is normally very quiet and polite of course thinks the library is for running and screaming. This of course leads to one of us hauling her out when she wont listen and then trying to calm her down because she wants to run. I really hope that with time she'll get better.

The big change though? B has decided to go vegan, or as he wants to call it, "Plant based" since we don't want a ton of processed foods plus he doesn't like the term vegan. I've wanted to do this for years so I'm all for it. It's going to be a slow transition for all of us, I'm getting some books and will make some ground rules. He admitted if it's not in writing he'll be able to claim ignorance if he goes out and gets a non-vegan item so rules will help us stick with it. We're also trying to cut out cokes (erm, sodas?). I honestly think cheese and Dr. Pepper will be the worst things for me but I'm excited to start trying things out!

Conversation

Tonight before bed I was trying to get Kp to count, it went like this:

Kp: ... 5!

I swear, she does this on purpose. Super cute and funny.. but I'd still love to hear her count.

Fooood - Menu plan 7/9

This weeks menu is super simple

Breakfasts
Eggs and toast
Cocoa crispies for B
Oatmeal

Lunch, as always leftovers

Snacks
Banana Bread
Fruit
Bell Peppers/Cauliflower
Stuffed Jalapenos
Brownies
Smoothies
Yogurt dots

Dinner
Baked potatoes, salad, and a steak for B
Copycat Panera mac-n-cheese with roasted zucchini
fajitas
Sandwiches with homemade salsa and guacamole
Pizza and salad
spaghetti and salad... possibly roasted cauliflower
black beans n rice (our stand by recipe)

Notice the almost nightly salad? That's thanks to getting lots of lettuce from Bountiful Baskets. I seriously need to find a recipe that includes romaine other than salad.

Vanilla

We've been sick. and tired. and now KP is teething (I think). So that's pretty much my round-up of the week.
Last night I had a few minutes to finally make the vanilla extract though.

Someone in a local group was kind enough to send some members vanilla beans for a "Lets make it and share tips" kind of event. I forgot, and carried the vanilla beans around in the diaper bag for a while since thats where stuff gets jammed into when Im bringing stuff in from the car.


Super easy to make:

2 cups vodka
6 split beans
Put in canning jar and shake.


I did this around 10 last night and by this morning it was already changing colors.  I'm so excited to see how it turns out since I've only ever had imitation vanilla extract.
Now, I need a nap.

Menu plan 7/1

So I dont assign days to what we have (usually), I just pick the meals for the week and then go for what sounds good, or what is easiest to make if its a rough day.


Breakfast:
Biscuits with turkey and cheese for B
Oatmeal
Eggs
Banana bread
Yogurt with fruit
Cereal


Lunch:
As always, leftovers


Snacks:
Olives
Smoothie packs
Pudding
Pretzels
Vanilla wafers
Graham crackers
Diced fruit and veg


Dinner:
Crockpot baked potatoes and pasta salad
Tvp tacos
Turkey Sandwiches for B and faux turkey sandwiches for me and kp with chips and homemade popsicles x2 - these are reserved for the 3rd and 4th when we'll be out watching fireworks
Spaghetti w tvp
Black beans n rice
Rice with mushroom soup and rotel - easy version of chicken and rice, minus rice.
Add whatever veggies we have on hand to the meals. Those are usually last minute "what needs to be used first?" add ons.
